We created this cheese to rediscover the process that our ancestors did in the Garfagnana mountain pastures more than 70 years ago. It is the rediscovery of the taste of making cheese with freshly milked and unpasteurized milk, to keep intact the bacterial flora typical of an environment or of a breed of animals. The pearl white color of the paste is unmistakable, while the scents are typical of raw milk processing: elements that change depending on the production period. The name of this particular pecorino is a tribute to Remo Busti, founder of the company in 1955.
