Medium-aged pecorino, with a white, compact and slightly chalky texture. It takes its name from the area where the dairy is located, that is the Municipality of Fauglia included in the "Chianti delle Colline Pisane" area. The rind is brown due to the surface treatment with olive oil foundations. Limited production in the autumn period.
