Provolone del Monaco is a semi-hard cheese, with medium or long maturation, produced in Campania. The characteristic of this cheese lies in its ingredients: only milk from the Agerolese cow. The name derives from the sackcloth cape that shepherds wore to protect themselves from the cold during the journey from the hills of Vico Equense to Naples, the main market for their products.
